Prep the produce: Peel and core the pineapple, then chop it into chunks. Wash the cucumber; peel if the skin is waxed or if you prefer a smoother flavor. Roughly chop it.
Blend or juice: Blender method: Add pineapple, cucumber, lime juice, mint leaves, and 1/2 cup cold water to a blender.
Blend on high until smooth, 30–60 seconds.
Juicer method: Run pineapple, cucumber, and mint through the juicer. Stir in fresh lime juice at the end.
Adjust texture: For a silky drink, pour the blended mixture through a fine mesh sieve or nut milk bag and press to extract the juice. If you like some body, skip straining.
Taste and balance: Add more lime for brightness, a splash of water for a lighter texture, or a tiny drizzle of honey if your pineapple isn’t very sweet.
A pinch of sea salt can enhance flavor and electrolytes.
Serve cold: Fill glasses with ice and pour the juice over. Garnish with extra mint or a thin cucumber slice. Drink immediately for the freshest taste.
