Ingredients
  

  • 1 medium green apple (Granny Smith for tartness, or a sweeter variety if you prefer)
  • 1 cup spinach (or 1 large kale leaf, stem removed)
  • 1/2 large cucumber (peeled if waxed)
  • 2 celery stalks
  • 1/2 lemon (peeled if using a blender; unpeeled if juicing, pith removed)
  • 1-inch piece fresh ginger (peeled)
  • A handful of fresh parsley (optional, for extra freshness)
  • 1/2 to 1 cup cold water (if blending)
  • Ice (optional, for serving)

Method
 

  1. Wash and prep. Rinse all produce well. Core the apple. Peel the ginger and lemon if blending. Chop everything into chunks for easier blending or juicing.
  2. For a juicer: Feed cucumber, celery, apple, greens, lemon, and ginger through the juicer. Stir the juice and taste. Add more lemon or apple to balance.
  3. For a blender: Add cucumber, celery, apple, greens, ginger, lemon, and 1/2 cup water to the blender. Blend on high until smooth, 45–60 seconds.
  4. Strain (optional). For a silky juice, pour the blended mixture through a fine mesh strainer or nut milk bag. Press to extract the liquid. For a thicker, fiber-rich drink, skip this step.
  5. Adjust and serve. Taste and brighten with extra lemon if needed. Pour over ice if you like it extra cold. Drink right away for the freshest flavor.
