Wash and prep: Rinse celery thoroughly, especially inside the stalks.
Roughly chop into pieces that fit your juicer. Peel lemon and ginger. Core the apple if using.
Juice the greens first: Feed celery (and cucumber, if using) into the juicer.
Go slowly to extract the most juice.
Add flavor: Juice the apple, lemon, and ginger. The lemon brightens the taste; ginger adds a gentle kick.
Taste and adjust: Stir, then taste. If it’s too strong, add a bit more cucumber or a splash of cold water.
If it needs brightness, add a little more lemon.
Finish and serve: Add a tiny pinch of sea salt if you like. Pour over ice or enjoy chilled. Drink soon after juicing for the freshest taste.
No juicer? Blend everything with 1/2 cup cold water.
Strain through a nut milk bag or fine mesh strainer, pressing to extract the juice.
