Prep the apples: Wash and dry the apples. Slice into wedges about 1/2-inch thick.
If you’re prepping ahead, stir the lemon juice into cold water, dip the slices for 30 seconds, then pat dry.
Mix the base: In a medium bowl, stir together peanut butter and Greek yogurt until smooth and creamy. If it’s too stiff, add a splash of milk and keep stirring.
Add flavor: Stir in maple syrup (or honey), vanilla, and a pinch of salt. Taste and adjust sweetness.
If you like, add a pinch of cinnamon for warmth.
Adjust consistency: You want a dip that clings to apples without feeling heavy. Add more milk, 1 teaspoon at a time, until it’s scoopable and glossy.
Garnish (optional): Sprinkle mini chocolate chips, chopped peanuts, or chia seeds on top for texture.
Serve: Transfer the dip to a small bowl and arrange the apple slices around it. Enjoy right away, or chill the dip for 15–20 minutes to thicken slightly.
